Thank you for the question on Biblical grammar, “Why does Bible grammar seem intentionally perplexing compared to today?”
I am not a Hebrew or Greek scholar. In taking Hebrew and Greek in seminary, I found that by taking Greek, I finally understood English grammar better. Greek is very precise and there is less ambiguity than in English.
For example, when one says, “You come here.” the word, you, in Greek is clearly understood as being singular or plural, while in English, it is vague, at least in my mind of you as a particular person or “you all”.
I can’t say the same for Hebrew, so I will let others comment on that.
